    2 cups freshly grated carrots
    Grated. By you. With the box grater in the back of the drawer. If you reach for the bag of pre-shredded matchsticks we cannot be friends and frankly we never were.

    1 can (8 oz) crushed pineapple, drained
    Drained. Read it again. Drained. The juice goes down the sink. This is not a smoothie. This is architecture.

    1 cup sweetened flaked coconut
    One full cup. Anyone who says coconut doesn't belong in carrot cake has also never been in love and it shows.

    1 cup chopped walnuts (plus more for the top)
    One in the batter. More on top. If someone at the table says they don't like nuts in their cake, quietly reconsider knowing them.

    2 cups flour · 2 tsp baking soda · 2 tsp cinnamon · ½ tsp salt
    The bones. Sifted, not shaken. Cinnamon at two teaspoons is not a suggestion, it is a court order.

    3 eggs · 2 cups sugar · ¾ cup vegetable oil · 2 tsp vanilla
    Two cups of sugar. Yes. Two. Put the calculator down and step away from the recipe you were about to ruin.

    Cream cheese frosting: 8 oz cream cheese · ½ cup butter · 1 tsp vanilla · 4 cups powdered sugar
    Between every layer. On top of every layer. Down the sides of every layer. If any cake is visible you did not use enough and everyone at the table knows.
